Super easy, speedy and delicious homemade ice-cream for vegans and non-vegans alike. When you are too lazy to walk to the shop and when only ice-cream will do, blitz the following ingredients in a blender...
1 can of full fat coconut milk
1 tablespoon of coconut oil
3 tablespoons of cocoa powder
1 teaspoon of honey
a pinch of salt
When smooth transfer to a freezer proof dish. Freeze for a couple of hours. Stir through with a fork intermittently to stop ice crystals from forming.
To serve sprinkle some grated dark chocolate and coconut shavings over a generous scoop (or two) of ice-cream.
