Guilt-free raw vegan chocolaty goodness. No cooking. No added processed sugar. No dairy. No gluten. No fuss!
- 1/2 cup walnuts
- 1/4 cup almonds
- 1/4 cup desiccated coconut
- 1/4 cup dates
- 1/4 cup of plain cocoa powder
- pinch of coarse sea salt
- warm water
Blend the nuts in a food processor until you have a sandy texture. Add the dates, cocoa powder (save a little), salt and a couple of tablespoons of water. A pinch of salt really intensifies the flavour of the cocoa. Blend again, adding more water if you need it, until the mixture is smooth but still retains a little texture. Firm but malleable!
Roll or just squish the nutty mixture into bite size pieces. Roll some of the truffles in a little extra cocoa to create a intense chocolaty crust. Roll others in desiccated coconut for a slightly lighter Bounty inspired version.
These truffles are a delicious little treat by themselves or great with coffee!
Tip: Add a spoonful or 2 of pea protein powder to the mixture to create mini power bars. You may need to add a little more water to get the right consistency.
